The Sakana, Petty and Sujihiki are the three knives I use day in, day out in my kitchen. The Petty is a perfect small all rounder and works extremely well with vegetable preparation and slicing. The Sujihiki is the ultimate cured and raw fish slicing knife, its balance and feel are bang on. Its super sharp! Lastly the Sakana. This knife is a collaboration between myself and TOG. We
